I too recently made bacon using a similar brine and smoke process. I too have a WSM. My WSM is the 18” version.
I’ve got a WSM that cooks great, but I’m thinking of upgrading soon.
Pit barrel cooker or a Weber Smokey mountain all good to begin on and last you for sometime.
Very versatile. I use my WSM like a drum quite a bit.
