Parent context: I did prime rib for Christmas Eve a couple years ago. Broiled for the sear because I didn't have my blackstone yet. Broiling was fine, but now that I have one, I'd probably use that for the sear. Reply: Use the oven or a fire/torch for your sear. A Blackstone is good for searing flat cuts, not a prime rib. It needs to be in contact with the flattop to get a sear.

I usually spatchcock, do it at like 150 for four hours, and then I blow torch it heavily on the Blackstone to try and brown up the outside.
