Pros

  • Kettle or WSM all day.
  • Lump charcoal on my Weber kettle, tri tip needed about 2 minutes per side to really get the colour I was after.

  • You can get some great tasting meat smoking off the kettle like this - it’ll taste better than pellets and not hard to do. The biggest negative is you can fit a lot of food on there ( though you can get a couple racks of ribs and I’ve go...
