So basically that just leaves the PocketBook Verse - provided the OP is in an EU country and doesn’t just use euros for convenience. (PocketBook Lite is newer and cheaper but no card slot. And I’m guessing that hardware-wise it’s not going to be noticeably more advanced than the Verse.)

I mostly use the Pocketbook Lite, and when you export notes from it, it puts them in HTML format, with one HTML file per book. So you could easily import it into a browser and copy/paste from there, or write a script to parse the HTML to format it however you like.
