I have both and I bought the Kobo because i felt like it was too fiddly to use the Boox and I just never used it.
Kobo would be the best option for you. More customizable than Kindle, but not as overwhelming as Android-based devices. The UI is very nice and intuitive.
For people who buy or borrow from various DRM-based sources (Google Books, CloudLibrary, BorrowBox) and don't de-DRM their books, Kobo has the edge here.
Kobo adds better Calibre integration and organization, but their dictionaries are worse.
If you want to own your library, like have access to files of your books - then kobo
Why not try a refurbished Kindle? I have Voyage that I jailbroke(?) and installed KoReader on and it's great. Or a second hand Kobo.

You’ll have to install Nickelmenu and look it up (should be posts on both on the Kobo subreddit) but you can add both Google Translate and DeepL to the popup options on a Kobo.
My Kobo is close to a decade old but I've only been using it regularly for about two years. I bought it new and it's still in very good condition. It almost never freezes or crashes.
I have to charge my Kobo pretty much every day now because the battery is fried.
