I purposely upgraded my old 4080S to 5080 for that very reason. I consider it useful.
If you need the advantage of more CUDA cores for productive applications, keep the 4080S. Otherwise, there is no point of choosing it.
The ROG STRIX PSU you are looking to get comes with 12V-2x6 natively. Also, The RTX 4080S draws a max of 320W. Use the cable that comes with the new PSU.
They’re not very different, they’re built on the same process node. Neither card is really worth the price. If the 9070 XT is available to you for less, consider that instead. The options you mentioned are overpriced for the performance they offer.
I have little doubt that your 4080s will be the bottleneck of your setup.

And now that prices had stabilized we still had a generation of arguably overpriced cards when comparing to older generational uplifts (IE the 5080 only being like 15% better than the 4080S).
I'm doubtful you'll have a good time with a 4080S trying to push 3x 4K displays simultaneously.
This PC is 18 months new and performs beautifully.
