For 1440p gaming plus editing on the Ultra 5 250K the RTX 4070 Super is the sweet spot. Great 1440p gaming performance, excellent NVENC for video encoding, and CUDA handles editing workloads really well. The 250K is a strong CPU so it won't bottleneck you at all.

Only thing I’d say is the RTX 5060 might be the weak spot for a $1500–$1700 budget. If you can bump that up to something like a 4070 Super / 5070, you’ll get way more value and it’ll last longer.

The only thing I’d maybe rethink is the RTX 5060. It’ll work fine, but if you can stretch the budget even a little, something like a 5060 Ti / 4070 Super / 5070 would give you a way bigger jump in performance and last longer.
