Royal Caribbean is a mid-tier mass appeal cruise line, with the amenities to match.
RC typically has more activities, ranging from casino to game room to outdoor sports courts, pools, sometimes things like rockwall or other more adventurous activities (flow rider, etc). One RC ship I was on even had ice skating. Seriously.
RC vibe is a bit more ... civilized? Carnival typically attracts partiers/drinkers/bachelor party types in my experience... at risk of being rude it's kind of more of the poor persons cruise (and i'm in that category so I don't mind). RC...

Food-wise, RC's main dining room beats Carnival's hands down, but Carnival's Guy's Burgers are legit better than most of RC's casual spots.

RC definitely wins on activities - their rock walls and flow riders are actually fun, whereas Carnival's entertainment feels like they're trying too hard sometimes.
