Ofc it would be better if you just went for 800 as minimum recmmended for 3090 Ti builds, but there can also be some spikes with those GPUs, so if the price difference is not too much, I'd personally probably go even higher.

Probably the GPU: 3 years ago I sold my 3070ti and bought a used 3090ti. Before I had issue running games with 8gb of VRAM, now, even 3 years after, I don't care, just set all settings to high, reflections to max and enjoy.

I have a 3090 Ti in my first slot and a 9070 XT in my second. The 3090 does my main rendering (capping the frames), and with the Lossless Scaling app, the 9070 XT turns that to a buttery smooth 4K 120.
A 600W power supply will NEVER have enough or the correct power supply connectors for any 3090 let alone a 3080 Wattage be damned! Lol the amount of kludging boggles even my genius level rigging sensibilities…

Saw one benchmark of a game from gamers nexus that ryzen 5 5600x have similar and near performance with those cpu you mentioned, of course in 1440p and the gpu used is 3090 ti which is the same performance with 5070 ti and rx 9070 xt
