I'm mainly wondering if it will work with the RAM so that, based on the price difference between the two, I can see what the advantages are.
11700k with 32gb of RAM is a great platform for the next few years, roughly equivalent in performance to the non-x3D 5000 series AMD chips.
I was going to suggest a CPU upgrade to a used i7 11700K, but it’s probably not worth the performance difference.
11900k and 11700k are good options, I'd advise against moving platforms unless you're doing a full refresh with a GPU as well.

On an i7 11700K my CPU was benchmarking much slower for a couple reasons that I was able to fix, so maybe these might help you: Bad airflow meant that the CPU was thermal throttling and lowering clock speeds, and my RAM was running at 2600mhz instead of 3200mhz.
