So I did the Gaggiuino mod, but then my solenoid valve instantly went out and I was just done messing with it at that point
Once I got the Gaggiuno I finally managed to dial in and now my shots taste balanced. As a bonus I can finally steam milk properly to learn latte art.
The Gaggiuno is a game changer. Now I just need to wait for new grinder to arrive. I'm from my CM800 to a Shardor 64mm for more consistency and less retention.
I have a friend who went real nerdy with hacking his Gaggia following https://gaggiuino.github.io and pretty sure he pulls better shots than I do.
