I’ll do a very thin layer of avocado oil during the preheat before I have bread in it and by the time I am ready to bake most of the smoke has dissipated.

Also I would recommend avocado oil because it’s smoke point is higher than grape seed oil (525 if I recall correctly) Reply: Just an FYI, a UC Davis study found that at least 82% of avocado oil samples were either rancid or mixed with other, cheaper oils like soybean or canola. Some samples labeled as "pure" or "extra virgin" contained close to 100% soybean oil.
