I have a 6900 XT and I wouldn’t upgrade to the others as it’d be a downgrade. I run 180hz @ 1440p no issues with a 9800X3D and 6900XT.

For Asseto Corsa 6900xt should be fine. Metro even with RT my 6950xt (3440x1440) handeled really well. The same resolution, high settings (some options even higher) I had 60+ fps in Kingdom Come Deliverence 2 (unfortunatelly FSR, even as native is bad). You should be fine with 6900xt.
