For $320 I'd get used RX6800.
An RX 6800 has similar performance to a 3070 Ti. Even with console optimization a normal PS5's performance isn't even close to a decent PC with a 3070 Ti.
The 6800 isn't a downgrade it has enough muscle to make up for the AI slop that the 5060Ti has to use to keep up.
