The other option is to get the 500GB nvme, and save up for a decently large HDD (4-8TB). Download your library from Steam to the HDD, then before you play, just move the game files to the nvme (Steam has this function built into the launcher) In theory, it should move fairly quick because HDDs are good at sequential reads (reading chunks of storage like games).
