I was in similar boat and went Sony for one main reason. Lenses.
Sony have stacked sensor (so less rolling shutter, blackout free, more frequent AF sampling which results in faster AF for moving targets) vs Canon that is still non stacked so to get this fps on E-shutter it degrades from 14-bit to 12-bit (degrading image quality) * pre-capture is much better on sony - you can configure both fps and time of pre-capture - on Canon it's always 0.5 sec at max fps (so additional 20 photos every time you use pre-capture) * Sony have much better battery management - 630 photos using evf vs 390 for r6iii based on CIPA standard * in mechanical shutter mode Sony have DGO - meaning it combines 1st and 2nd iso gain and reads them ant the same time to improve Dynamic Range - so good in fact that is practically at the theoretical limit of dynamic range for FF
Sony have less problems with overheating in video (most tests I saw finished after battery died in like 2h in 4k 60p - even saw someone record for 6h with dummy battery)

You cannot do silent photography with the Z5 II. I agree. It is incredible value. But it is nowhere near as versatile as the A7V. The Sony costs exactly twice as much as the Z5 II in my region. It is definitely worth the price difference.

Of course a7v also have some advantages - pre-capture in 14-bit raws (nikon only in jpegs) that you can configure both fps and time of pre-capture - better dynamic range in mechanical shutter (they use DGO so it's currently best dynamic range below medium format - well, at ~iso1000 z8 catches up and later they are the same) - AF (Sony AF with their AF chips was already amazing, now it's even better)
I agree that the A7V colors are much better; they’ve clearly made improvements, and the ability to use LUTS for photos is a game-changer that the A7IV lacked.
