For Rum my go-to default these days is mostly Appleton 8 with a bit of Smith & Cross, if I have it.
I'm a big fan of Smith & Cross
I’ve been really loving Smith & Cross on the rocks as an end-of-night sipper
I usually go with Appleton or Mount Gay as a more basic rum and then I try to keep Smith and Cross to have as a funkier rum.
I love S&C but have found it to be too dominant in this drink (tho it plays very nicely with Laphroaig and absinthe).
I'm sure that it brings a lot of intensity to think drink even if a more mild rum still works super well for my tastes.
Quite nice, and I'm looking forward to making some other Cynar things after the calendar is complete (and once I get another bottle of Smith & Cross, as this one almost gone).
