Project Cars 2 has the best career mode of any sim I've tried. There are multiple different routes you can take through the different levels depending on what type of cars you want to drive. The physics aren't bad either, and is probably has the best selection of content of any sim.
The major downside is that it's no longer available to buy, so your only option is getting a copy off eBay (if you're on console) or buying a Steam key.
