If any game epitomizes both the stealth aspect as well as overhearing or watching "random" occurances it's the Hitman series.
The campaign game is a lot like Hitman in its mission setup (and gameplay somewhat).
While proceeding through a mission, there is always a delightfully thin line between cool, controlled, ruthless efficiency and frantic, slapstick carnage.
