If I were choosing from scratch, I might have suggested something like the Helix Elite, where you could have a Sunset insert on your side and a Midnight or Twilight on your husband’s side.

I don't think the Helix Elite is a bad choice at all and it is in my top 2.
Helix Elite does allow you to swap out that top comfort layer (super easy as it is encased in its own cover and right under the zipper top.

We actually chose the helix elite with the tempur smart pro base
Have you guys looked at the new Helix Elite lineup? We have experience with both the midnight and the sunset. The Elite hybrid uses a 7 lb and 4 lb memory foam in the comfort layer. It is supportive and yet it provides good pressure relief and motion isolation.
