I'd look at Fuji (X-E5, X-T50), Nikon (Zf, Z5ii, Z7ii-*used*), and Sony (a7Cii, a7Cr).
the one I find best is the Fujifilm X-T50, both in terms of photo quality and the camera itself.
For APS-C you can consider the Sony A6700, the Canon R7, Fujifilm X-T50
