I think the key is the 1Zpresso J-Ultra. It punches way above its weight for only $200. Grinder and fresh beans are key. This hand grinder is really really good.

So I did a thing and bought a 1zpresso j-ultra. ... It's been absolutely amazing so far. If I could go back before I bought the encore esp, I would've just gotten the jultra. Manually grinding with this isn't hard at all, and takes about 45 seconds for an 18g dose.
