Nottingham or some english yeast might give you some nice esters that compliment the finish product

Nottingham is tempting but know it’s not an authentic Kolsch yeast.

Nottingham is so good! Especially, low 60s. Fast, good attenuation, and drops fairly quick.

Nottingham is typically a pretty aggressive fermenter so I wouldn't mash any lower for that one.

So, I switched to a Fermzilla with floating diptube and pressure transfer, which allowed me to dump the hops directly into the beer.

Now I have a larger fermzilla for my intense dry hopping needs.

I actually just picked up a Fermzilla since I was tired of not getting full kegs and I brew for a lot of events so beer clarity is important to me. ... It's so easy for me to collect yeast and pitch into my next batch now so I'm saving money on yeast and pitching better yeast to boot.

I used Flotit 2.0 on kegs but also in my fermzilla.
