I’d look in West Yellowstone first for Yellowstone, but depending on how busy it ends up being and your budget, you might need to stay farther out in Cody or Bozeman. I’ve found last minute hotels in West Yellowstone before though.
I went snowmobiling in Yellowstone in February a couple years ago. It was amazing and highly recommended. You will need adults to drive the snowmobiles, but we basically had the whole park to ourselves.

In fact the one potentially unsafe thing I can imagine happening is if they decide to approach the bison in Yellowstone, the way people approach deer in Nara Park. Do not do this. These are wild bison, and if you get too close, they will charge. Two people were gored by bison in Yellowstone last year.
But while I love Banff, etc, I'd save that for a separate trip, and do Yellowstone instead because of the diversity you speak of. Good wildlife park too.
Last year I did Teton+Yellowstone+Glacier and I absolutely loved it. Flew in to Jackson WY, spent 2 nights at Teton, then spent 2 nights at Yellowstone, then drove over to Glacier (with a stopover midway at Helena). Wish I spent at least another day at Yellowstone but it was a great trip, one of my best ever
