If you can afford to stay in one of the mountain villages like Wengen or Murren it’s much more scenic and unique than staying in Interlaken. When I went I only spent like 30 minutes in Interlaken as it’s the exchange train station to go to the other places. We stayed in Wengen for 3 nights and loved it.

We spent a few nights in Wengen and did some epic hiking, we paraglided off a mountain through the valley, we took a helicopter trip to the top of a glacier and had a snowball fight in July, ate, drank, walked the shops. There is so much nature and adventure to be had there.
We stayed in Wengen, and had a hotel that overlooked this valley, and you can somewhat see down into the valley, and as far as you can see are the gigantic alps, in all directions. Snow capped peaks year around, literally can see glaciers, the scale really messes with you and makes it hard to place yourself in it.
