Pros
- I was in the same boat and finally decided to get a Varia VS6 as I have heard the stock burrs are good for traditional espresso and you can buy the upgraded conical burrs as well. WLL has the VS6 discounted currently so seems like a good...
- The Varia VS6 is interesting in that it takes a variety of burrs and both flat and conical!... The advantage here is not only in picking your (initial) preference of burr set but in having an assortment of other burrs available should yo...
- Picked up the Varia VS6 with a mild holiday sale on the grinder + big discounts on extra burr sets. Only done about half a small bag of coffee on the VS6, but it's consistency and shot dialing seems to be better already.
- How about the Varia VS6. Awesome quality and features, plus you can swap different burrs (even conical or flat). Around $1000 adding a 2nd burr set.
- Varia Vs6 gives the option of flats vs conical and offers several burrs of each. Ease of use is through the roof and replacing burrs is easy and requires no technique. Low retention too. Any negative remarks about varia were related to i...
Cons
- Have you considered a Varia VS6 with the additional burr options? Varia had several QC hiccups with the first batches of the VS6, but they seem to have resolved
- I would however check out the rather extensive thread on the home espresso forum re. The VS6 grinder. Quite a few QC problems are discussed there.
- The Varia VS6 having the dual compatibility was an attraction for me for this very reason but it has its own drawbacks like propriety burrs and adjustment knob will sometimes shift during grinds.
- In the end the reports of alignment issues and general crappy reliability of the lot of them lead me to a second hand Niche Zero for £450 and a K6 hand grinder.

The Varia VS6 is interesting in that it takes a variety of burrs and both flat and conical!... The advantage here is not only in picking your (initial) preference of burr set but in having an assortment of other burrs available should your needs change or you just want to experiment.

Varia Vs6 gives the option of flats vs conical and offers several burrs of each. Ease of use is through the roof and replacing burrs is easy and requires no technique. Low retention too. Any negative remarks about varia were related to its prior model, the vs3. I haven’t seen almost any bad comment about the vs6 because it was built a lot better.
Current very happy owner of a VS6, I swap between flats and conical pretty often.
Consider the Varia VS6. It can take either a flat burr or conical burr and the company makes several of either. Why restrict yourself to a single choice when you can retain the freedom to have either?
The Varia VS6 having the dual compatibility was an attraction for me for this very reason but it has its own drawbacks like propriety burrs and adjustment knob will sometimes shift during grinds.
