Tuscanyyyy! I could not recommend it enough for an anniversary, especially if you're avoiding the beach. It's beautful, relaxing, charming and you can plan it around how fast or slow you want to go. Slow? Eat, stroll, wine tour, pool etc. Fast? Day trips to small towns!
When I did my trip, we went to Tuscany after Amalfi. Got dropped of at Naples, picked up a rental car and then made the drive which if I remember correctly, wasn't too tiring. Stay in any of the little towns and do day trips - it's beautiful, it's relaxing, the food and wine is great. Highly recommend
You might want to swap a few of the bigger cities out for small but nice villages in the countryside. E.g. in austrian mountains, lake bled, tuscany or black forest or similar.
