There’s no problem with the sidequests in The Witcher 3, because: 1. It commits to the rpg genre, you’re supposed to have a vast number of ‘side’… stuff to do; 2. Most of the sidequests are really, really well designed. Some arguably better than the main quest.
Witcher 3 threw me off because my first impression was a 2004-2009 CRPG crappily ported and downscaled to a PS360. It felt incredibly dated, could not stomach it during COVID, and I only truly got into it last year to be hooked by its story and world building.
I played Witcher games years ago and I really enjoyed them, especially Witcher 3, but in these games you simply spam the sword attack while casting two spells and that's it, and the story makes the game quite linear.

Your not comparing the new RT version of Wicher 3 to the old pre RT version? It may be RT noise reduction your seeing, with my week hardware I just run the old version of Wicher.
Even Witcher 3 takes 13gigs at most.
