Temeraire might be worth a go
Temeraire is a Chinese breed in-universe but he's still a western dragon insomuch as we have "eastern" and "western" ideas of what a dragon looks like, as far as I can tell. I think everyone into dragons would like these books but not if they'll be disappointed by the basic facts.

Temeraire series. It's set in an alternate history version of the Napoleonic wars, and the dragons have a main rider that they're bonded with but also an entire crew working on them like ships. The dragons have human level intelligence and speech, but less social awareness which leads to some funny moments.

Novik's dragon books were both amazing in their own right, and a fond reminder of the dragon narratives I grew up with.
a historical fiction retelling of the Napoleonic wars that features a plethora of dragons from all different cultures/regions. Much lighter hearted than GOT/HOTD but handles complex issues about civil rights for intelligent creatures vs military obligations.
One of the best parts of the series is seeing all the different breeds of dragons.
The best one is the Temeraire series by Naomi Novik. The titular dragon is a rare Chinese breed and there are a ton of other Asian dragons that come into the story in later books, so it fits the ask.
