I can easily spend 2 weeks there: watching Kitesurfers, plenty of hiking opportunities in the surrounding area (of you have a rental car), plenty of day trips (Morocco, Cádiz, Gibraltar, Bolonia, …), incredible birdwatching opportunities and plenty of interesting nature in general and if one likes kitesurfing you can spend endless hours doing exactly that. And last but not least: chilling at the beach, meeting new people and just live the slow life.

With such a short amount of time I’d take a train to western-ish Spain - Lugo, Tarifa, a Coruña, Sevilla are all great.
