Helsinki and Tallinn are pretty calm, in my limited experience.
The food is great at both cities and there are lots of markets, amazing cafes, parks and some outstanding thrift shopping opportunities.
I’d actually consider spring in Europe but go to Tallinn. It’s a strong IT hub, is not crazy expensive and nicer in summer than UK.

I’d try Tallinn, Riga and maybe Helsinki! Vilnius is very child-friendly too.
Tallinn just has a lot more to check out and do, and i also was thinking 3 days would let us take a day trip to the islands if we want. I think you should stay one more day in Tallinn.
