I think the most obvious example is a game like Stone Age. It's significantly harder to get gold than wood, so in order to balance the reward you get for pursuing gold than wood you can convert gold into more points than wood.
Stone Age is also a great choice, plays 2-4 but good with 2, fun theme, collecting resources and worker placement.
I played 2 stone age games on BGA after this comment and I’m really enjoying it, ended up ordering one
