Speaking of, I've heard Valparaiso is cool but if it were me arriving from Aus I would just relax in Santiago for the first two nights. This will be your only opportunity on the trip visit nice restaurants and bars--If you find the right spot they'll even make you a Peruvian style pisco sour!

I think Santiago is a great starter for non-LATAM travelers that want to know the continent: you get the nature, the spirit and the air of the region in an organized, metropolitan and accessible city.
Some other places that I've heard of that are even more low-key/off-the-grid were Tzuzuna and Santiago!
