I would suggest checking out Salt Fat Acid Heat by Samin Nosrat. It contains lists of ingredients sorted by seasonal availability as well as side diagrams on the shapes and cuts of meat. I personally think it is the most useful cook book ever written, more of a combination of recipes chosen to nail down concepts and very direct textbook style explanations of foods and ingredients
