I typically stay outside Pienza --a bit easier to get to Montalcino, Montepulciano , the Chianti region and Cortona etc. It is wasted time driving from Florence and at the premium for staying in even a middle of the road place in Florence I've found some extraordinary places in the countryside.

Passignano, Umbria and Pienza, Tuscany were stunning and not at all busy.
I'd say Pienza and San Quirico, the latter especially for the surroundings.
if you want both Volterra and Pienza (closer to Siena) are lovely!
We are currently staying at an agroturismo in Pienza. It’s called Cretaiole and let me tell you… it’s a life changing trip.
