Panama is amazing.
I've been to Cuba, El Salvador, Guatemala, Coastal Rica, Honduras, Panama, Mexico, and Puerto Rico, and I'm planning a trip to Colombia this year.
Panama was fun and you can get to anywhere else in Central/South America reasonably cheap on Copa Airlines from there. Their currency is the USD which is convenient. I’m a bit of a history buff so the canal tour was impressive to me. I also loved the mix of foods and cultures.
Panama, I felt safe , the city is easy to navigate however you will encounter some places that don't speak English.
Costa Rica was mainstream, now the niche alternatives Guatemala and Panama are slowly becoming mainstream.
I just got back from Panama and loved it. Beautiful beaches and nature and it was so easy to get to and get around once I was there.
Portugal or Spain, Costa Rica (does jungle / nature appeal? osa peninsula), Panama (bocas del toro), St. John (hurricane season is a risk)
You could go to Costa Rica or Panama! I bet there’s probably really nice places for that budget and you could plan some excursions to get out.
Another longer option is to continue into Panama, get to Colon, and do the San Blas Islands boat trip to Cartagena. You could also just fly to Panama City.
