I would personally skip Monument Valley and add a day to Sedona and give yourself some breathing room to enjoy the Grand Canyon.
Oh and related, elsewhere on that site it looks like the Navajo also do horseback tours in Monument Valley.
My second choice would be Monument Valley, Arches, Grand Canyon.
Fly to Vegas and hit the 5 National Parks in southern Utah (Zion, Bryce, Capitol Reef, Canyonlands, Arches) in order then drop down into Arizona and hit Monument Valley,Antelope Canyon+ Horseshoe Bend, Grand Canyon on your way back to Vegas.
You don’t have swathes of desert and totally different landscapes with gigantic natural landmarks like Monument Valley as just one example.
