I would consider Barcelona ( even if the beaches nearby are horrible), Salou, Ibiza and Mallorca.
Go to just about any Mediterranean resort where British kids go and there will be booze cruises running. Ibiza, Mallorca, Mykonos, Malia, those sort of places.
Mallorca is lovely as well.

I did Mallorca may 22, 2023 and there were some chilly days. Ocean was swimable but chilly. Had a pool at Airbnb that was too cold to use with chilly wind.

In August every place in Mallorca is crowded/touristy. The parking lots are huge, but still chaos in summer.
Greek islands plus add Croatia. French Rivera plus add Ibiza and Mallorca. Portugal add the Azores and Madeira. My one piece of advice would be to work with a no fee travel agent! I have been using g one for 2 years and it’s made my life a lot easier!
