Middle of the two maybe the Korg OpSix since 6 Op FM has a ton of range.
I'd definitely go for the Opsix. You already have what is (arguably) the best FM synth Yamaha ever made, so any species of DX7 would't add much. Opsix on the other hand is a different world. If you like FM, you'd love the Opsix I would think.
Recs in this category for a polysynth include Novation Peak, Prophet Rev 2 (i have 16-voice but 8 is great too), Korg OpSix for a different synthesis style, ASM Hydrasynth. If you want a modern classic, lifetime-workhorse synth, this is where most of the budget will go.
you can buy a used Korg opsix for under $400, which is a far more flexible and powerful way to explore FM.
