I’d pick Kawagoe. Kichijoji is nice, but it’s so close to central Tokyo that I wouldn’t really consider it a day trip.

Unless you're the biggest fan ever of edo period architecture, going from Kyoto to Kawagoe is a huge waste of time. You'll be traveling for like 5hs or more because you'll need to go to Tokyo, then to Kawagoe and back to Tokyo, and anything you'll see in Kawagoe will be eclipsed by what you just saw in Kyoto.
