I would stay in Interlaken for longer (assuming you just plan to use it as a base to visit the surrounding area) and save Bern for a bad weather day from there.
and interlaken isn't bad either, the harder klum funicular may be open that time of year and is supposedly amazing (it was cloudy the day we were in interlaken, so we did the lake brienz ferry over to giessbachfalls instead). schynige platte will almost certainly be closed as well but just an example of there's good views even around interlaken itself.
Interlaken is an expensive detour where you can only really go hiking. There's plenty of easier places to visit in Austria that are cheaper too.
I really want to see Interlaken for the countryside and nature, and then focus on the main cities like London, Amsterdam, Milan, and Paris. So it’s a mix of big city experiences and some real mountain and lake scenery!!!

You can take a train to all the small villages in the alps within 2 days. Spectacular. Now you don’t have to see Innsbruck. Head to Salzburg then Germany.

I found Interlaken to be a tourist trap. Yes the journey there was very beautiful, but the town seemed to be full of people taking selfies in front of the expensive shops. It also has a Hooters restaurant. I can’t imagine spending 3 days there.
Continuing south, Bern is about an hour by car to Interlaken, which would make for a very memorable (but long) day to combine for a day trip.
You could go from London to Paris for food and art, then Interlaken for hiking, and stop by Barcelona before ending in Madrid for a good mix of city and nature.
