For me Hanoi is the obvious choice, but it's a hectic place and not for everyone.
The karst landscape here is otherworldly and a wonderful contrast to the madness of traffic and air pollution in Hanoi (my first day in Hanoi it had the second worst air quality in the world.)

Hanoi in the north is cool, I think 2 days is enough there. The motorbike food tours in Hanoi are pretty cool, but they are expensive and you don't need to pay that cost to eat great food. But getting on a motorbike in Hanoi is an experience, even if that's just taking a motorbike taxi across town one time.

I thought Hanoi was great btw, maybe colonial architecture but the museums were very interesting and lots of good cheap food.
