Use a third party camera app that lets you disable most processing like Halide.

Something I find myself doing quite often is using the Halide app for iOS, which enables manual setting control as well as raw shooting for better editing.

I used Halide for a while but went back to Apple's camera app.

I’ve tried this with 4 different phones and the AI gibberish texts are so obvious on the 16 series, you need third party apps like halide and indigo to somewhat eliminate the post processing.

Only way to skip the (over)processing is by using Process Zero in Halide as far as I know.

Theres this app Halide that has a feature called Process Zero which strips away all of Apple's post processing. I believe it shoots in RAW and is overall much better then the stock camera app.

Halide has a nearly-zero processing mode.

Halide is definitely the app you want: https://halide.cam/ ... I've been happily using it it for over 3 years. It gives you as much control as possible over your camera, and has an optional "Process Zero" mode, which prevents as much of Apple's post-processing as possible.
