I've only been to Bruges, but if I was going to do 2 nights, I might do them in Ghent. It's a little bigger than Bruges, but basically just as pretty. Honestly, though, I might do 2 nights in Ghent (with a trip to Bruges), and then 2 nights in Brussels. I'm someone who likes cities and likes Brussels. But between Bruges and Ghent, Ghent is probably going to have more to do.

Belgian here, 3 nights in Ghent is fine if you take a day to visit Brussels or Bruges. I prefer Brussels.

We stayed in Bruges and took a day trip to Ghent and those 3 days were magical. Absolutely stunning cities, walkable and charming, and ate so, so much chocolate. It was perfect.

Ghent is a university town with more to do in the evenings; Bruges is sleepier but maybe a little more charming? In my experience the restaurant scene is also better in Ghent, but I've spent more time there more recently so I might be biased.
