We went to Galway to visit our daughter one summer and had a great time.
I can see a feasible route that starts in Dublin, goes north through Belfast (decent hub for anything you want to see in the North), then down through Donegal > Galway > back over to Dublin.
I was planning on using Galway as our mid-trip point, but was only going to stay 1-2 nights because they have the International Galway Art Festival going on (I am totally into it, but I was worried the crowds would be a bit much for my Dad)
Both have tons of pubs, with outdoorsy activities nearby.
I do, however, highly recommend going to the cliffs, Galway was really cute, and then I went down to Wicklow and Kilkenny, and that part of the country was also fantastic. And then the wild Atlantic Way and such.

Better to do a day in Dublin. Go to Galway, check out Connemara. Drive south through the Burren - Cliffs of Moher - Dinner in Limerick - carry on down to KIllarney.
