I personally think Fez and Marrakech are worth visiting for the architecture and history, even despite the hassling.
For a bigger souk experience you have fez nearby chef, and marrakesh near essaouira, so you could package those up.
After four days, we moved on to Fes, which overwhelmed us with the sensory overload of its ancient Medina.
For what it’s worth I also enjoyed Fes more. I only stayed a couple nights in the Medina of each city and only explored the Medina area of each of those cities so I can’t speak for other neighborhoods. I thought Marrakech was a bit more grungy and smelly, although it definitely had that “Morocco vibe” you probably imagine in your head and the Riads were stunning!
I was in Fes, of all city, Fes, on the EVE of Ramadan. Omg. The crowd. The stampede. I am from Singapore so it was extremely overstimulating.
I’d maybe reduce a day from Marrakech or Essaouira and give it to Fez, there’s a lot to see there if you’re into history and old districts.
I loved Tangier, but Fez was a bit too intense with shop sellers and people wanting money from me. After 1 day walking around I wanted to leave

I'd suggest staying overnight in Fes. It's really great and far nicer than Marrakech and my favourite place I went in Morocco.
