Ecuador, Bolivia, would also be good options. Bolivia has the uyuni salt flats which looks unreal, even more at night, lake Titicaca, Sucre (known as the white city) etc. Ecuador has the Alps, the Galápagos, etc
The Andean region is among my favorite parts of the world but I'll take Ecuador or Peru any day instead.

Latin America you have lots of options in Costa Rica, giant mountains in Ecuador, beautiful beaches and Lost City hike in Colombia, Machu Picchu in Peru, Patagonia in Chile and Argentina.
Also curious why Ecuador has been left out. It was my favourite country in South America. Quito, the Galapagos, the Amazon, Banos, the cloud forests....
Ecuador can be amazing.
You could start in Ecuador for a week or so. Quito/Cotopaxi/Baños/Mindo.
South America (Ecuador, Peru, Bolivia) cool and affordable.
But even in countries like Brazil, Ecuador, or Colombia you are mostly fine in well-touristed regions, not so much in the big cities.
Initially I was thinking Ecuador > Peru > Chile could be a cool route
