The one concern I would have is that Copenhagen has really cool and rainy weather outside of a narrow two months window in the summer and I really think it's a place best enjoyed when the weather is good.
Copenhagen is great with kids in my opinion, it's a small adorable city and despite falling birth rates the city is full of 30 something parents pushing around strollers.

Copenhagen is nice it’s just super expensive so be prepared for that but it has one of the nicest metros in Europe and it’s only about a 20 minute commute on it from CPH, if you have more time there you can easily take the train or bus to Malmö, Sweden and visit there, the prices are a little bit better there than in Copenhagen.

Stockholm, Amsterdam, and Copenhagen are all lovely destinations - they're much more relaxed than say Paris or Rome, but the weather will be more mixed if you head north.
Copenhagen with a 12 month old was a great trip for us this autumn! Super easy to navigate public transport with a stroller. We stayed in Østerbro and the highlights for us were the Tower playground and the Little House kids cafe. The airport has a little outdoor and indoor playground as well. Travel with little ones is hard but I can definitely recommend Copenhagen to any toddler parent

Two caveats are that (1) it's very expensive compared to the other places you list that you've been, so budget accordingly and (2) two weeks is quite a long time for just CPH, so you might consider some excursions elsewhere, planning for some off days, or just shortening the trip a bit.
