Colca Canyon is great too, I had three days so you can be there really early to see the condors.
I did one full day in Arequipa (arrived after night bus), then did a 2d/2n Colca canyon trip (really cool to see the condors! And the milky way (but you'll likely see that on the Salkantay trek too)!)
Colca as a day trip is plenty, loads of people do exactly that.

Colca Canyon is such an incredible place! I did the trek a couple of years ago and the views were absolutely breathtaking.
