There are definitely a ton of drunk American partiers on both Caye Caulker and Ambergris Caye - not my vibe either. But they do also have some good snorkelling (and diving, if you do that).

Caye Caulker is a nice relaxing spot (though it does have some party elements) but IMO it's not really anything special compared to lots of other places in the Caribbean. And it doesn't really have beaches.
I stayed at Caye Caulker with my 5 and 8 year olds. They loved it. We biked around, swam at the split, had so much fun.
I have a rough plan of flying into chetumal and starting with Bacalar, then going to Belize for Caye caulker and San Ignacio, then Flores, lanquin, Antigua, and lake Atitlan in Guatemala.
Visited Hopkins on another trip and personally didn’t love it as much as Caye Caulker which seemed a lot more lively.

You might already know, but Caye Caulker is a fairly big party island, unless things have changed in the past 10 years. It is very international and fun but also fairly Americanized.
It certainly has "island vibes". It had a very "Caribbean island" feel with lots of brightly colored buildings, lots of places to eat/drink, etc.. You may want to see if any of the dive shops do snorkeling excursions.
